A podcast I listened to mentioned someone using a side project to apply and supplement the knowledge they gained by working in trailhead. Wondering if anyone has any insight into this? Would love to apply stuff im learning in a more tangible way - just stuck on how to do that :)

Well you can also start with basic things and work your way up. I started side gigging originally with reports, dashboards and data loads. Then moved into fields, validations, etc. Even these basic items have a decent demand in the market. I can tell you even after you have been doing this a long time you will still do things and make design choices that will make you cringe even 6 months down the road.
