Hi, at Intact we recently purchased this product to manage specific lines of business and brands. We have multiple brands that have a unique look and feel for customers. We currently use Cascading style sheets to personalize the UI's for our existing customer facing portals... Can the same be done with Salesforce ? Is there a reference guide / technical article that can shed some light on this ?

Are you referring to Experience Cloud ?
If so you can apply your own CSS overrides in the builder or use a CSS Style Sheet from static resources
