Is there a way or ways in Salesforce to track calls and online meetings in Salesforce without the use of CTI integration?.

Hi Lena,
If you mean for a user to manually record that they've had a conversation with someone, then that's one of the use cases for tasks.
If you want automatic logging of calls, that requires CTI.
