Hi, New NPSP setup. Is there a way to use it in the default dev Salesforce way and NOT in the NPSP pre-configured way?

Yes, in your NPSP settings People> Account model> Edit, you will see the option for One-to-One Record Type. If you choose this as the master record type you will get one account for every contact. https://powerofus.force.com/articles/Resource/NPSP-What-is-an-Account-Model#!#onetoone This record type is no longer recommended by SF, so you might want to read through this information to make sure this is the account model you wish to use.
