I have a couple of custom fields on Product and when I go to page layout they are grey and unable to added.
Appreciate any suggestions, thank you

Thansk for the screenshot.
If they are greyed out in the top table, it means they are already on the page layout. If you click on one of the greyed out box in this table, the screen shoudl jump to this field on the page layout so you can move it to another location.
If you cannot see the fields when on a record, there are a couple of things to check out:
1- Check the fields' field level security and make sure it's visible to your profile (and other profiles if needed)
2- If you're using Dynamic forms, make sure it's available and visible on the Lightning page
