Hi,
For our opportunity approval process we have three approvers.
Is it not possible to have only 2 out of 3 approvers approve the opportunity to set the approval status to approved.
From what i can see you either only need one person to approve or a unanimous decision. Not the desired 2/3 I'm after
Any help would be greatly appreciated.

I totally get what you are asking. This is kind of a limitation in Salesforce. We got around this by deciding that 1 of the 3 will always need to approve it, and they should be the final approval. So we made the first 2 approvers approve first (with at least 1 approving), then the record moved to the next approval for person 3. This gave us 2/3 approval. Hope this helps.
