Quite stumped on this issue. Is there a way to turn off history tracking for Order Amount in Order object related list because I am using a new custom field Order Amount w/ Discount (roll-up summary) to track discounts to orders now. On that note, is there a way to track history for roll-up summary fields?

Hi Wilson,
Looks like we can not turn off history tracking for ToalAmount field, it's not appearing in Set History Tracking option ( Setup > Order > Fields > Set History Tracking )
and also not mentioned in salesforce help document of Order https://help.salesforce.com/articleView?id=order_history.htm&type=5
