Professional Edition Stage change History Report

I am looking for a way to capture the stage change each time it has changed using Professional Edition. I am looking to capture all the stage changes and activities within an opportunity. I have created a reporting Snapshot, however, it just shows the Last Stage Change Date and not a time stamp of each time it was changed. I believe this is possible in enterprise and up, and I am wondering if something similar can be created in Professional Edition? Thanks!

    Hi Ed, thank you for your reply! I do have access to those reports, however, I am looking to capture that information as it happens over time. An example would be capturing each time a stage was changed and each time an activity was logged. I would then want to be able to run a report that would capture the entire history of the stage changes and the activities logged, not just the most recent. Any other recommendations for Professional Edition?
