Data Loader App settings via Mac

Hi all; am I going crazy; I can't find the Settings on the Data Loader app I downloaded to my Mac? New Mac user here... (PCs RULE)

I need to play with the UTF-8 encoding settings for unique character uploads. How do I do this is the app dowsn't ofer a Settings option?!
