I am conducting field documentation where I will identify all fields in use on the standard and custom objects and document what they are/are used for and any formulas associated. Are there any automated tools to help with this?

    Have a look at the Ocotpus package from the AppExchange.  It will provide you with a lot of the detail you are collecting and makes it available in PDF and Word.  In addition to custom fields, it can report on your custom objects, apex classes and visual force pages in the org.
