I'm trying to change the quick action for the chatter feed layout. But under the layout section there is only the create new task action availble. How can I add other actions such as poll, questions etc. so I'm able to drag and drop them to my quick actions section?

Hello Philipp,
When you say "Chatter feed" layout, do you mean the chatter feed on any record pages?
You have to edit the object's layout and add quick actions to have them appear on chatter feed of a record view page.
