I realize it seems to be the user's decision whether they want the person receiving the task to get an e-mail notification...but just wondering if the above option is available?

There is not a setting inside the system that lets you deactivate them for yourself, no. Most, if not all, current mail clients let you create rules though so you could certainly set yourself up a rule that deletes or immediately marks as read and dumps them in a folder without your input. I would look into that.
