What's the best way to document complex Salesforce processes?

Question

I have some complex business processes on Salesforce that trigger workflows, email alerts, process builder and flows. I want to document these so that it is easy to refer back to them in future, as I know if I need to change something a year down the line, I'm going to forget what I have built!

Has anyone got any tips on the best way to document this sort of thing? I was thinking some form of flow chart but I don't know of any programmes I could use to build a flexible one, the Word document one is too rigid for what I want.
