Got it. Unfortunately there is no magic reset button and once you have made changes to a live (non trial) org there is no way undo the changes. Keep in mind that records move into a Recycle Bin and can be restored if still in the recycle bin and deleted fields can be recovered one at a time from within an objects field page. Again both are contigent to not being hard deleted. You could reach out to your Salesforce AE or support and see if they can do anything but I have not heard of them rolling back an org and I feel confident saying if they do anything it will come at a cost.
My suggestion would be to start mapping out your needs and processes, roll up your sleeves and rebuild. Nothing you have removed impacts Salesforce as a platform so you basically need to re-customize.
