How can we add a category for "type" under Organizations?

We need to organize "Organizations" by groups such as "college", "youth" or "adult".  How can we customize fields under "type" to include these specific categories?

    Go to Setup > App Setup > Customize > Accounts > Fields

     

    Click 'Edit" next to "Type" to add, edit, or delete picklist values for this field.
