In classic you could just designate the primary but there doesn't seem to be a way to do that in Lightning or re-order contacts so the first one is automoatically designated as primary.

Hi Adrian,
Unfortunately, you need to switch to classic UI if you need to change the primary contact for shared activities. In Lightning, the contact that was added first is automatically designated as primary contact.
