Personally I would recommend removing the Create New Opportunity buttong from the Account detail page (also disable the Quick Create feature). That will force user to create the Opportunity from the Contact, that way you'll know who was involved on each opportunity. This is especially handy when you have turnover betweeen users, and there are multiple Conatcts and Opportunties per Account.
