Activity Subject Combo Box -> Picklist Only?

The combo box Subject field causes issues with our clients that need a consistent limited list of values for reporting.   We would like to change the Subject's data type from combo box to a standard picklist, but we can't change the Subject data type.  We could create a custom picklist field to replace the standard Subject field, but then the Subject field is not removable from the Task / Event page layouts. Suggestions?

     @_jennil - when you get around to trying out @CTU007's suggestions and one of them works...come on back and share with us which one it was.  This will help spread the love to the Community should they run across a similar question.  Thanks SO much!!
