Also I can not get the HTML tracking to work for opens. I don't even see the status anywhere.

If you’re part of an Einstein Activity Capture configuration that is set to automatically capture emails, you can’t manually log emails or events from the integration. However, you can update the automatically created relationships between the email and Salesforce records from Outlook and Gmail.
