You can create a workflow action to create a task when the workflow fires at the same time the email is sent to put an activity on the record. Unfortunately, this is static and the best way to do this would be to copy and paste the info from the workflow email into your task. This will not use merge fields but will give you the overall message of the email that was sent instead of the title.
