Do we need to turn on for individual profile or is there an org setting to turn it on auto for all users?

@Vamshi Takkalapalli , Marty is correct that it's in your control to enable the Lightning Experience User permission in custom profiles on a profile-by-profile basis. This allows you to roll out Lightning Experience to groups of users on different timelines.
If you want to enable the perm on multiple profiles at once, I believe you can use Data Loader:
