We work with an implementation partner (we don't use communities) that also uses Salesforce. We want to give them Chatter Plus licenses but not allow direct login access to our org because of security policies.
Can this be done by setting their SF org as the IdP? If yes, how would the authorization piece work? Any details on this are really appreciated.

The simplest thing to do is create a Salesforce-type Auth Provider. You'll have the system generate a registration handler and then modify it to assign the Profile you'd like. Once you do that, just add the Auth Provider to your My Domain
