The certified developer course is on the Premier Training catalog. Search for Building Applications with Force.com - Part 1 and Building Applications with Force.com - Part 2.
In the introduction sections there is a link to get a pre-built org specifically for the training, e.g some users and profiles and custom fields setup for the exercises.
The org will have about a 2 week life span.
We use this course for our new hires/admins to get ramped up on the platform asap and aim for their Certified Developer exam.
Administration Essentials for new admins and
Administration Essentials for experienced admins are the starting point on the admin track. (Similar to the ADM201 and ADM211 training courses). These will build towards the Certified Administrator and Advanced administrator exams.
Again there should be pre-built orgs for these training modules.
For Sales and Service Cloud specific training there are bolt on modules. Use the product filter on the left to limit the results down accordingly.
If you've done the Admin essentials, skip most things with a "Getting Started" in the title. Look for other courses like CTI adapters, Knowledge, Quotes, Visual Workflow etc.
Haven't see any prebuilt orgs for these, but a developer org should let you play with most, if not all, the features, with the exception of anything sandbox specific.
