I want to create a filter in Tableau which displays last 4 completed quarters data. Like today, the table should show data from Oct 2020 to Sept 2021.
And on Jan 2022, the table should show data from Jan 2021 - Dec 2021

Change the calculated field from before to below and add it as a filter as TRUE to your view:
DATE(DATEADD('year',-1,DATETRUNC('quarter',TODAY()))) <= [Date] AND [Date] < DATE(DATETRUNC('quarter',TODAY()))
