We want to run a SQL automation immediately upon a new visitor filling out a web form and being newly added to a data extension. How could we achieve this? It seems that automations can only be triggered by file drops, or schedules to run hourly at best.

You can for sure also trigger an automation using the API. Knowing this, enables you to work with Ampscript/SSJS to trigger the automation immediately upon form submit.
