I need to export a bunch of values and change the values to NULL. I know that is possible in settings, but I don't see it as an option. Do I not have the correct version of dataloader? I get sent to the external dataloader instead of the in-app option. Do I need to have an upgraded version of dataloader to do so? Right now, I just have the free one?

OK, I see you are using Dataloader.io, not Dataloader.
For Dataloader.io, go to the "Advanced" section when you reach the "Run" stage:
