Task object has subject picklist. I want subject picklist field to have different values:
For instance, If I am creating task for accounts, subject picklist should have: - Call
- Send Email
- Send Quote
- Other
If I am creating task for leads, subject picklist should have:
- Sales Call
- Vendor Sales Call
- FABTECH Sales Call
- Follow-up
- Other Call
- Send Email
- Send Literature
- Other

Hello,
If you create Task Record Types and create Quick Actions for those record types you can restrict the Picklist values per record type.
