Within salesforce, what is the best way to "tag" my contacts, as "alumni" or "donor", etc.?

I'm especially interested to know, as I set up Salesforce for the first time for our ministry, if there's a best way to add these "tags" to the NPSP data import template? I want these "contact types" differentiated for sending out emails or creating records of certain groups of contacts once we are using salesforce.
