Is there a way to create a report with the QUOTES that have their STATUS changed to ACCEPTED ? Is there a way to add a DATE when the Status of a QUOTE is changed to accepted? Basically, I want to pull reports to see the dates at which the QUOTES were accepted. I tried different formulas but I can't seem to figure out how to do this.

You can create a workflow rule or use Process Builder to update a Time Stamp Quote_Accepted_Date__c. Set the criteria to when Status = Accepted.
