Unfortunately you don't have the standard Approval Process available in Professional Edition
Only possible way to meet your requirement would be to kind of mimic the approval process using the status picklists/recordtypes and page layouts.Just to give you an idea:
- You can create a status picklist, with value depicting the various stages of the record with Approved / Completed being the end stage.
- Using the record types you can control the visibility of these picklist values, and show them to relevant profiles.
- You can use page layout, to show only relevant fields to the users belonging to different page layouts.
- You can utilize the record assignment, to assign records to different stakeholders at different stages or status values.
