We would like to edit the Look up screens of the Contact Module, either by:
- removing the New button or
- editing the field that need to be populated when that button is clicked.
I am sure Ill kick myself when Im told how to do it.

That "New" button is a feature called "Quick-Create" and it is nothing but Bad News. My advice is to disable that friggin' thing right now! Records created using Quick Create blow past Validation Rules and Required Fields like they weren't even there. Do you like crappy data and records that are missing key pieces of information? CONGRATULATIONS!!! You've got it!!! Do you like "Orphaned Contacts" that are not even connected to an Account? You're a winner!!!
Disable Quick-Create on your SFDC Org ASAP! If possible, go back in time and disable it sooner. Better yet, go back and find whoever enabled it in the first place and stop them. If that doesn't work go back even further and prevent their parents from meeting each other. Kill it, cover it with a sack of Quick-Lime and bury it, and if it tries to crawl out of the grave smack it in the head with a shovel and bury it again.
