The use case is I'm want to build a view for our prospecting team to identify if they have contacted a prospect or not.
If anyone can help me with the roll up summary field or perhaps suggest another or better option that would be great.

Currently you can't do rollup-summary fields when there isn't a master-detail relationship there, as I'm sure you've found out. There's an idea you can vote on here https://success.salesforce.com/ideaView?id=08730000000BrqsAAC to add that functionality.
You could probably use a workflow rule to update a field when activities are created or edited, essentially trying to duplicate the functionality of a rollup-summary only in a lookup relationship, but that would depend on your edition and use case. Although, this is really more of a workaround and may not work in your use case.
