For example, the commit for Q1 at the beginning of the week was say $10m. Today the figure is $8m. What has changed?
It could be that the opportunity stage has changed, or the close date has been pushed out of the period I am looking at, or the opportunity amount itself could have changed.
I've had a look at the Opportunity History and Opportunity Field History reports but I can't seem to get one report that answers this sort of question.
Any suggestions? The period being looked at needs to be variable, so needs to work for the current financial period, or quarter and so on.

Two options come to mind: History Trend Reporting (Setup->Customize->Reports and Dashboards) or Analytic Snapshots (Admin Setup->Data Management->Analytic Snapshots)
