when we get a new order in from a contact we assign a opportunity, I would like to set up a email ( Thank you ) to go out each time a new opportunity is added to a contact.
also I will have a non directing lead or two that will also be attached to the opportunity that I would also like the email to goto

Are you on EE or UE? You might be able to do this with a Workflow Rule.
