I configured the unsubscribe link in my NPSP sandbox but was kind of confused about how to deploy it to my production Org
Because I can't find the option for the installed package in the change set option

If you mean the sample email template that comes with NPSP, you will need to clone it and deploy your custom version of the template in the change set. You can’t deploy the managed version.
