Wondering if anyone has some insight on why my LOG A CALL button is not showing in my standard buttons.

Log a Call isn't a standard related list button like New Task or New Event in Salesforce. Instead, it's a global action that needs to be added to the page layout under Mobile and Lightning Actions to appear in the Activity component.
