Good afternoon,
I created the page layout as the trailhead challenge for energy audits as it instructed me to, and then I assigned the page layout to the sales profile, and the administrator profile so I would be able to see it however it does not appear in the app launcher or with the other objects.

@Brandon Sullivan, Perhaps you have missed the tab in this module: https://trailhead.salesforce.com/content/learn/modules/lex_customization/lex_customization_custom_objects?trail_id=force_com_admin_beginner
Can you check via Setup > Tabs > Custom Object tabs; is there one created for 'Energy Audit'?
If not, click 'New' and select the object.
