Set the predefined value of the Stage field to Qualification

I'm in the "Create Global Quick Actions" module and I'm having trouble locating where I can change the stage default value to qualification. I've searched online and on trailhead for a solution to this problem but all the posts I see generally are saying the same thing but I'm not seeing it in my navigations. I also tried adding qualifications to the sales process. Can someone from our community please help me figure this out?
