We are currently trying to configure SSO using SAML Salesforce as Identity provider I know we can add custom attributes but can we remove default attribute email from saml response?

I can't see Identity connect option in my org. 

"Identity connect Enables user provisioning and single sign-on integration with directory services like Microsoft Active Directory when the Salesforce Identity Connect utility has been configured for the user's org."

 We don't Use Microsoft Active Directory, Maybe that is the reason I can not find "Identity connect". Is it possible still to configure SSO with my SF org as Identity provider?
