As mentioned in the subject, I simply want to pick the 'Salutation' field to appear in one of our 'related list' interfaces.... in this case when viewing a campaign and looking at the members list which is just a related list to the contacts data. Is this possible somehow ? The summary information is really not useful for us if we can't get the users salutation

This is the limitation of campaign member reared list. You can create formula field which will show you Salutation field. You can use in related list like below
