What happens to the current Salesforce Mobile App once the New Salesforce Mobile App is available in Winter '20? - It won't affect until you enable it in your org.
Will the Old Salesforce Mobile App still be working for our current users? - No. Oncce enabled in your org, you cannot use the old.
Will the new Salesforce Mobile App replace the existing one? Yes if enabled.
