but the recipient is receiving the email in plain text formatting which includes all of the html tags..how do I resolve this?

I should add that I've tried installing sendhtmlemail package but SF doesnt like that becaues I have Contact.Name as an encrypted field:
Send_HTML_Email_Testflow: Get_Contacts (Get Records) - Flow filters can't reference encrypted fields. Remove the reference to field "Name" on object "Contact".
