I was wondering if there is a time stamp/code options on forms assembly that you are given when a form has been completed?

You can set this with a formula in the Form Assembly Connector to populate a custom field in your SFDC specifically for recording this purpose. See the Form Assembly documentation on formulas & aliases available.
