I am a bit confused as to how re-importing them will work. These are leads that have already been converted so we want to recgonize them as converted leads still. When I re-import the converted lead will be create a new lead since I've deleted the old one? We want to update the existing record and have it remain a converted lead.. How do I go about doing this correctly?

You shouldn't be re-importing Leads. Once a Lead is converted into a Contact, you should be working with the Contact record, since that's where all your interactions and history with that person will be,
