if all my sharing rules are set to Private but the profiles CRED is set to full access, while they still have access ? does the profiles open up access from the OWD settings?

An easy way to remember it is sharing rules can't take away CRED rights to objects, only grant more. Field level security, however, can remove visibility of individual fields on objects a user would otherwise have access to
