I am testing Lightning in a sandbox but when I moved from Classic to Lightning, I no longer see "Campaign Influence" on my opportunity page layout. I have tried to go to set up, opportunity page layout and add it back but it does not appear in the list of options on related lists. Is there a way to add it in Lightning?

Do you have multiple record types for Opportunities? Make sure you add the Campaign Influence related list to all of your relevant page layouts.
