I'm currently a Tableau Desktop 8.0 Certified Professional. Will I be able to take a Delta exam from 8.0 to 10.0 (once it's released) or can Delta exams only be used to for a one release difference?

Great question! We are still finalizing the rules for v10 but it is not likely you will be able to Delta across versions--only to the subsequent version. You can update your title to v9 with the current Desktop 9 Delta exam and then update it again to v10 when the Desktop 10 Delta exam becomes available.
