I am looking at server performance for sites and I am wondering whether there is information in the Postgres SQL about whether each request that happened hit the cache server or hit the underlying database?

vizqlserver logs. You're looking for something like this, from the path similar to the bottom "source" line. This is a screencap from Splunk, which is fantastic for this kind of thing:
