How can I create a contacts + notes + company report that shows the contact information beside the last note entered on a company record, and not all the historical notes?

Salesforce does not provide a standard way to report on Notes related to other objects, which is a known limitation. The current reporting capabilities for Notes are quite limited, and Salesforce has acknowledged this gap. One cannot even create a custom report type for Files and Content (Notes), further limiting reporting options. If this functionality is essential for your org, consider upvoting this idea to push for improvements:
