We currently track product interest using a multi-select picklist field on the contact/person account. Is there a better way to do this? I haven't found many options other than multiselect picklist fields or junction objects. We need a way to indicate one or more different potential products that they would be interested in to help cross-sell/upsell and to track long-term potential.

You can set up a custom junction object (call it something like "product interest") linking the account/contact object with the product object. You can then add it as a related list to the contact/account page.
Instead of multiple values to a picklist you would have multiple records linked to the contact/account.
